Summer is upon us here on the Northern East Coast! Time to bust out all things summer including MEYER LEMONS! Trader Joe’s shelves are stocked with this Meyer Lemon Cake Mix with Lemon Icing. Keep reading to see if this item took the cake!
What is Trader Joe’s Meyer Lemon Cake Mix with Lemon Icing?
This cake reminded me of a cross between a pound cake and a lemon poppy seed cake.
Included in the box is the cake mix, and the Meyer Lemon powder to make the icing with. The loaf came together pretty quickly by just adding an egg, water and some melted butter to the dry cake mix. Pop in a preheated oven and bake.
Meanwhile let the cake cool by removing it from the pan, and prepare the lemony icing. Once cooled, pour the icing over the top of the cake. I saved a little bit of the icing to add to my individual piece, because who doesn’t love a little extra icing?
Once the cake is cooled, if you poke some holes throughout the top of it to really let that icing seep into the cake that would be a game changer and totally delicious.
Where In the Store?
This cake mix had its very own display along one of the end aisles at my local Trader Joe’s. In the same display was their Unsweetened Oolong Black Tea, a perfect pair for a summertime picnic.
How to Serve Trader Joe’s Meyer Lemon Cake Mix with Lemon Icing
We served slices of this loaf cake on a plate with a big glass of milk.
Another way to serve this cake would be with a scoop of vanilla ice cream. A loaf cake topped with a scoop of creamy vanilla ice cream on a hot summer night?? SIGN ME UP.
If you want to get really creative you can always add some shredded coconut or your favorite berries to the mix to really make this cake shine.
Meyer Lemons are inheritantly popular in baking because they have more of a sweeter lemon flavor and are less acidic than your average lemon.
That drip though!! YUMMMM This cake mix was purchased by Kathy, a family friend who just couldn’t pass it up when she accompanied me in my Trader Joe’s May Haul. This cake was good, but I thought it could have had more of a lemony flavor in both the actual cake and the icing.
If I were to buy this cake mix again, I would probably add a little lemon zest to the cake mix and some freshly squeezed lemon juice to the Meyer Lemon powder icing mix.
The cake baked up pretty well. It got a little brown around the edges and the top, but the inside could have used just a few more minutes in the oven.
As you can see from the picture above, the inside was still slightly under done, but the cake was moist and delicious. Not too sweet and didn’t have an overpowering tart lemony flavor, because of those Meyer Lemons.

Buy It Again?
I might buy this cake mix again, I might not. I feel like I would be able to make this myself from scratch at home, just using regular lemons.
The only reason I would buy this mix again would be because of it having Meyer Lemons in it and how easy and fast it was to throw together. Much less hassle with a pre-mix cake batter than dragging everything out of the pantry and measuring.
